OK, I’m a little excited here.  I was just browsing the web, and don’t ask me how, but I came across a link that allows you to watch cheese mature live before your very eyes via webcam. 

A British cheesemonger, West Country Farmhouse Cheesemakers actually set this up so that people would have a greater appreciation of what is involved in making a good cheese.
